Malic acid, also known as hydroxybutyric acid, has three forms due to the presence of an asymmetric carbon atom: L-malic acid, D-malic acid, and DL-malic acid. L-malic acid is a product of the human tricarboxylic acid cycle, so the human body can only metabolize L-malic acid. The natural form of L-malic acid is found in fruits such as apples, grapes, and lemons. Extracting it from fruits has low content and high cost, making it impossible to be produced on a large scale industrially. The production of DL-malic acid can only be achieved through catalysis by diacetyl monoxime (Chemicalbook - fumaric acid), and since the human body cannot metabolize DL-malic acid, even though DL-malic acid is allowed as a food additive in some European and American countries, people always have a sense of insecurity. Microbial methods produce all L-malic acid, so the currently used malic acid is all produced by microorganisms. In food and medicine, the malic acid used basically replaces DL-malic acid with L-malic acid.
